Veggie Stir-fry Jumble

This is a delicious jumble to make when you’ve got those odd bits and bobs left in the fridge to use up… It's full of colour, texture & heaps of the good stuff. Use the ingredients list as a guideline adding what you have available!

What you will need: Serves approx 4

2-3 cloves garlic, finely diced

1 or 2 chillies, seeded and finely diced

A thumb sized piece of ginger, grated or finely diced

1 or 2 peppers, seeded and diced

1 to 2 handful of mushrooms, diced

2-3 sticks of celery

1 red onions or shallot finely sliced

2 courgettes, topped, tailed and diced

2 handfuls of Tenderstem Broccoli/ broccoli roughly chopped

Cooked wild rice/ brown or basmati rice (cooked following instructions on pack)

Tamari soy sauce

Pepper

Olive oil

Let's get cooking:

1. Place a large wok or frying pan over a high heat and pour in a drizzle of olive oil.

2. Add the garlic, chilli and ginger. Allow it to sizzle for 30 seconds, stirring regularly.

3. Add the mushrooms and allow them to fry for 3 or 4 minutes, stirring regularly before adding the rest of your veggies.

3. Stir-fry the veggies for a further 3 or 4 minutes until the veggies still have a little ‘bite’ in the middle.

4. Add the rice, continue to stir fry for a further minute or two. Season a couple of splashes of Tamari sauce and black pepper... have a taste.

5. Check that the rice is piping hot and serve!
