Nana's Savoury Rice

My children call this nana’s rice, as when my mum makes this it’s always slightly different but always made with love... and they LOVE it!

A great one for using up those random veggies in the fridge too.

What you will need: Serves approx 4

2 small / 1 large onion finely chopped

2 garlic cloves crushed or finely chopped

4 carrots

1 leek

A handful of Tenderstem Broccoli/ broccoli

A few mushrooms

A cup of peas (frozen)

1 tsp Mixed Herbs

2 tbsp Tamari

1 veggie stock cube

2 cups of rice

1 tbsp of olive

Black pepper for seasoning

Let's get cooking:

1. Cook your rice following instructions on the pack (adding in the stock cube while cooking so it fully dissolves)

2. Chop all your veggies (leeks, carrots, broccoli & mushrooms) into small similar size pieces.

3. Give the leeks a good wash once chopped

4. Pop a shallow pan over a medium heat and add your onions and garlic.

5. Let these cook until soften not allowing home to catch and burn. If needed add a splash of water to the pan to stop them sticking.

6. Add all your veggies, herbs & tamari to the pan giving your mixture a good stir.

7. Let this cook gently for about 10 mins or until the veggies are cooked but still firm.

8. Add your cooked rice to the pan of veggies and give this a really good jumble. Bringing all the veg and rice together.
